Ron Gelish
Owner/Executive Chef
The man under the toque at Mac’s Steakhouse these days is Ron Gelish. Ron, along with his operations partner Scott Young, took over this venue in late October and believe they are the perfect pair to bring Mac’s back to where it started. Ron was professionally trained at the Culinary Institute of America, graduating in 1995. An externship followed at 107 Forest Ave. in Locust Valley, NY; a contemporary American restaurant that received three stars from Newsday.
In 1996, he moved to Aspen, Colorado, spending two years at the Little Nell Hotel as a banquet chef. Thereafter, he went to Portland, Oregon where he worked at Rex Hill Vineyard as a chef as well as Papa Hadyn Bistro.
Wanting to expand his horizons, Ron ventured out to the sunny island of Kuaui where he lived and worked for a year at Tahiti Nui as a Hawaiian luau chef.
In 1999, Ron returned to his roots in New York and began working at Lemongrass in Roslyn, for Tom Schaudel; one of the island's best known restaurateurs. Tom changed the restaurant to Tease, incorporating a contemporary small plate cuisine. The concept caught the eye of Newsday and earned a rating of three stars with Ron as it’s Executive Chef.
Ron joined the Rothmann’s Steakhouse Group in 2001 and his journey as Executive Chef has took him through three of their kitchens including Burton & Doyle of Great Neck, Rothmann’s of East Norwich and the opening of Sagamore Steakhouse in Syosset. Since the opening in March 2005, Sagamore has had rave reviews from The New York Times and Newsday.
Now Ron is poised to be the only Chef/Owner of an upscale steakhouse on Long Island. His dreams and passions have finally come through with the opportunity to create something new and exciting at Mac’s Steakhouse in Huntington. Combining years of experience in regional cuisine and the past 5 years of steakhouse fare, Ron has created a menu that appeals to everyone. His commitment to using only beef from Niman Ranch has already caught on with local “foodies”.
Scott Young
Managing Partner/General Manager
Scott Young brings more than 20 years of leadership in restaurant industry to the position of Managing Partner/General Manager at Mac’s Steakhouse. He has worked towards this opportunity his entire career, through catering concepts, casual themes and fine dining steakhouses, honing his craft in both New York and Las Vegas. After opening & operating some of the most successful venues, he is prepared to take on the role of operations partner at Mac’s Steakhouse.
His passion for the hospitality industry began at the age of 13, and continued when he needed to put himself through college. Upon graduation in 1984, Scott began in the kitchens of Restaurant Associates, working through several positions before moving to the front of the house as a Manager at the West End Café in Carle Place, gaining experience that would help him return to Manhattan in 1985. Scott was hired as assistant general manager of The Cadillac Bar, Manhattan’s first authentic Tex-Mex restaurant. Four years of high volume fun at one of the city’s busiest establishments included the New York City inauguration party for President George Herbert Bush.
Scott moved on to Pipeline in the World Financial Center to gain his first organizational experience. During this period, he met many movers and shakers of industry, one of whom eventually lead him away to become Assistant General Manager of New York’s Harley-Davidson Café in 1994. Ten weeks into the job he was made General Manager and a year later, Director of Operations. He would go on to oversee the construction and opening of the Harley-Davidson Café Las Vegas. Six years later and working in both NY and Las Vegas, Scott opened BB King’s Blues Club in Times Square and the Blue Note in Las Vegas. When 9/11 struck, he returned home to Long Island.
The changed landscape in New York compelled Scott to stay local and he was fortunate to connect with the fine Long Island and New York City operation of Rothmann’s Steakhouse in November 2001. Since that time, Scott helped that company expand and open two additional steakhouses in 2005 and 2006. Anticipating a new and exciting opportunity, he met with Gray Kunz in early 2007 to begin discussing the role of General Manager at Grayz. Another successful opening, with one of the world’s renowned chef’s has just added to Scott’s career.
But once again opportunity has knocked and Scott has the chance to finally call a restaurant his own. Working with Chef Ron Gelish, who he worked with in the Rothmann’s Steakhouse group for 5 ½ years, Scott feels that this is the final stop in a long and successful career. Scott and Ron both have tremendous passion for the restaurant and steakhouse industry on Long Island and this promises to be one of the best partnerships to come along in a long time.
